In New England many of us spend half the year longing for summer, but once it's actually here we realize that hot weather makes certain basic life-maintenance tasks (such as cooking) unappealling. However, we still have to eat, even when the thermometer goes way up and the weather is sizzlin' hot. Some of SPL's books on seasonal cooking and main dish salads can help you find dinners to prepare without turning your kitchen into a furnace. When Mark Bittman was still writing his "Minimalist" food column for The New York Times, he published "Summer Express: 101 Simple Meals Ready in 10 Minutes or Less" (Some people consider Bittman yesterday's news, but as far as I'm concerned, he's still the top). I've made several of them and they really are great for nights when you're hungry and want to keep cooking to a minimum.
And the good people over at The Kitchn have a list of "50+ Quick Dinners for Hot Summer Nights." I haven't tried any of them yet, but they look delightful, delicious...de-lovely.
And Delish has a compilation of "20+ No Cook Dinner Recipes."
